I Tried Chocolate Chia Pudding Instead of Ice Cream

Ice cream and I have a complicated relationship. I love it — but it doesn’t always love me back. After a late-night pint (okay, half a pint), I usually end up with a sugar crash, bloating, and that guilty “why did I do that again?” feeling. When I hit my 40s, those side effects felt even louder.

That’s when I stumbled across chocolate chia pudding. People online were raving about how it’s creamy like dessert but packed with fiber, protein, and healthy fats. Skeptical but curious, I swapped my nightly ice cream habit for chia pudding for a full week. Here’s what I found.


Why Chia Pudding Makes Sense After 40

Chia seeds are tiny nutritional powerhouses. Just two tablespoons contain about 10 grams of fiber, 5 grams of protein, and omega-3 fatty acids. For women over 40, this combo hits several pain points:

  • Fiber: Supports digestion and helps with satiety (something ice cream definitely doesn’t).
  • Omega-3s: May reduce inflammation, which becomes more important as we age.
  • Protein: Helps preserve muscle mass, especially when paired with strength training.

Instructions:

  1. Whisk together all ingredients in a jar (Or blend if you’re feeling fancy).
  2. Refrigerate overnight (stir once after 30 min).
